If you talking about the png or jpg standard icons, you can change them manually yourself via the properties or you could use iconpackager, but this isn't free.
You can always go to "Desklet properties" by right clicking the item then find de icon tab, and there choose to use custom image, set your own,apply and voila! you´re done...
