I would have to say that Itunes is the best for managing your iPod but you can look around Cnet.com

Any other open source project that tips your mind that also a good option to replace, lets say windows picture viewer, or messenger?

One of the most configurable and lightest media player has to be foobar2000.
I found songbird a bit bloated for my liking, but has got some great potential.

I'd probably use foobar, but I can't be bothered.
lesa, replace messenger with miranda-im, or pidgin, or something.
