Can I use an Ubuntu LiveCD to...

remove an empty partition and extend my Windows partitition to that now empty space?

I don't think Windows likes doing that natively (with the Disk Management MMC snap-in), so I was wondering if I could use another tool.

yes, the ubuntu LiveCD has GParted built into it, a partion manager. Boot up the LiveCd and open terminal, then enter this-

sudo gparted

then, partion to your hearts consent :).

I don't know what Ubuntu LiveCD you've been using, MM3, but you have no reason to do that in a terminal :P The partition manager is right in the menu, under System (I think.) Hit me if you need anything, NC.
