I'm new to Mac, and I don't know how to change the Dock App icons so I can customize them (as well as the Finder Side Bar icons and others.
Is there an application to make the task easier? Thank you.

To change dock items...namely finder and trash you will need a third party app. Candybar methinks.

But how can I change other icons like VLC, Dreamweaver etc.?
And can Shapeshifter do it or it just changes the system icons (default folder icons)?
Well the only icon I've changed in my dock is the mail, but I guess the same applies for most. Find the icon you want to use/copy/open apps folder/find the app/open get info pane/select icon(top left)/paste. Icon may not update in dock untill a restart....or drag new app/icon to dock.
The fun of course is finding all this stuff out for yourself. Good luck.
