Kopete has some nice iChat bubbles going on. Get Baghira, and it'll skin Kopete well enough, I s'pose. I never cared enough to make my linux box look like a mac, but Baghira is about as close as it gets.

You wont find a skinnable client for Linux, at least not like miranda or adium.

Try kopete or aMSN but the second one is only for aMSN and the only thing you are able to skin is the contact list and icons.

Kopete can only skin the message window because it can use the same message styles as adium x.

Or if you like Java apps try mercury messenger, it is java based and only for msn afaik.
