Do you have two cards or two DVI ports? because you can't do it w/ just one dvi port. a Splitter would just mirror the image.
Let's say we only have one card with a DVI and VGA output.

There are a few cards with dual DVI outputs, but they aren't very "mainstream" - I've been looking at this for a while, and if you want a DX9 compatible graphics card, with dual DVI outputs, you're going to have to fork out for one of the pro-rendering cards based on ATI/nVidia chips (QuadroFX and FireGL, respectively). These, however, cost lots of money ($800 US is probably the cheapest you can think of spending)
If you can make do with DX8(.1) compatibility (let's face it - what games require DX9 graphics cards to use them - not even Doom 3/HL2) then you could look at Matrox's Parhelia, which supports dual DVI output (or, in fact up to triple monitor output), as well as TV-out, which the pro-rendering cards don't seem to. The Parhelia, however, isn't the quickest card money can buy for 3D, but it's the highest 2D quality, and higher 3D quality than the DX8(.1) equivalents from nVidia/ATI (GeForce4 and Radeon 8000 series).
Other than that, Gainward made a dual-DVI GeForce 4 - the Gainward GeForce4 PowerPack! Ultra/750 XP Golden Sample (I wonder if they could have come up with a longer name?). You could also look at older pro-rendering cards like Quadro 4 from nVidia, which had dual DVI.
I know I've been very nVidia/ATI-centric, but it's my view that most people want a fairly mainstream graphics card, and so, without knowing specific requirements of the system's use, I can't really put my finger on a single card manufacturer...
I spent about a weeke trawling through Google Groups and a load of my other haunts (Ars Technica, for example) for ideas on how I could get a completely digital video setup onto my system... I stil haven't decided yet 
If you let me know in more detail how the system will be used, I could make a more definite recommendation...
