Simple OS X themes? Like.. What? Do you mean less brash Aqua styles? Alternative Aqua looks?

MacThemes is a good place to start, or look through MacNN's GUI customization forum for "unknown" releases, such as SmoothStripes Spring, which is one of my favourite Aqua-style themes.
