Mandrake Linux 10.0 till the PowerBook G5s come out or PearPC emulates at near full speed.
I use Windows XP Professional SP1 on my PC, Mac OS 8.1 (if I remember correctly) on my old Powermac 7600/132 and Mac OS 10.3.3 (need to update to 10.3.4 sometime) on my iBook.
I voted for Mac/Windows/*nix as:
1. I will be putting linux back on my PC soon
2. My iBook has Unix on (ie. Darwin right underneath Panther).
Windows XP Professional
Mac / Win / *nix
Windows 2000 Pro (Main atm =[)
Fedora Core 1, will be removed and possibly replaced with either ArchLinux or Slackware
What ever came stock on my Performa 580CD, Can't be bothered walking over to it and turning it on to find out =P
Mac OS X 10.3.4 & Fedora Core One (on VPC). I'd use FCO more but it's slow as hell.
